Easter egg tradition gets a twist with marshmallow decorating amid high egg costs
While egg prices remain significantly higher than in the past two years, consumers are starting to see a drop in prices from February to March.
In just the past week, the USDA's Egg Markets Overview reported a national decrease of $1.20, making a dozen eggs $6.85 on average.

“There are some ways to get your eggs to go a little bit further. So, in the morning if you’re looking for protein sources, you can definitely still do your eggs, you can do two or one, and you can add cottage cheese to that. It will still bulk up the volume of your eggs but you still have the protein there from the cottage cheese. It is a strong flavor, so if you are not a huge fan of cottage cheese, I would start with a small amount, but if you love cottage cheese, it’s a great replacement. It really makes the eggs a lot fluffier too," said Colleen Kiley, lead diabetes educator at Luminis Health.
“And what’s the texture like? Is it similar to the eggs?” Sanchez asked.

Dying Easter eggs is a popular spring tradition, and this year will be more expensive. Sanchez looked for an alternative and found generic, jumbo marshmallows are a good swap. When she went to the grocery store last week, one dozen eggs cost $8.99 while 12 jumbo marshmallows cost $2.19.
